It's been a hot minute since we've had a Luby's in Lubbock, but I remember going there a few times with older relatives. It was inside South Plains Mall, so a trip to Luby's not only meant I could have cake and pie, it also meant I was getting some new clothes or at least some hang time with cousins.

I couldn't find the exact year it closed, but I did find a health department visit in 2018, which is later than I expected. In my mind, Luby's is a very pre-2010s memory.

Luby's still has many locations throughout Texas for us to enjoy while on vacay, but ownership of this Texas chain is falling out of Texas hands. That's no reason to panic, though. According to Texas Monthly, the new owner has no intention of changing any Luby's recipes:

[Calvin] Gin insists that he has no intentions of tearing up the menu or of replacing generous slatherings of mayo with delicately judged measurements. “Overall,” he says, “food is not the problem.”

Luby's had racked up a tremendous amount of debt, so it was likely that we would have lost all Luby's restaurants without a buyer.

Calvin Gin describes himself in his Linked In page as a professional with "two plus decades of entrepreneurial experience not only as a business owner myself, but also as a senior-level executive in management, business development, finance and operations."

Perhaps he'll be able to add "savior of a beloved Texas food chain" to his resume as well.
