More Businesses Coming to Lubbock’s Covenant Park

Summer Moon Coffee is bringing its famed oak-roasted coffee and signature sweet cream Moon Milk® to a second location in the Hub City.

The Austin-based coffee shop will open its second location in late 2024 at Covenant Park. This second Lubbock location will be a fantastic addition to the Summer Moon family of coffee shops. The shop will feature a drive-thru, online order ahead, and free Wi-Fi, ensuring convenience and comfort for all visitors.

Jenny and Taylor Timmons, along with Kelti and Hunter Haley, are the proud owners of the new store, serving the SW Lubbock and Wolfforth community. Summer Moon Coffee embodies Texas hospitality through culture and quality. Their organic beans are roasted in hand-made brick roasters, down in the Texas Hill Country, over a live flame built with Texas post oak. Their beans, in addition to their signature sweet cream, Moon Milk®, are what set them apart from the rest.

The Haley and Timmons families have deep multigenerational roots in the Lubbock community and were overjoyed to introduce their hometown to their favorite cup of coffee in September of 2023 when they opened the doors of Lubbock’s first Summer Moon Coffee on Slide & 111th.

Also opening at Covenant Park in 2024, a third location for IHOP, the only site in Lubbock west of Quaker Avenue.

This location is the second local IHOP restaurant operated by the Romulus Restaurant Group. Romulus has 106 IHOP locations in 11 states. Romulus was founded in 1991 and is based out of Phoenix, Arizona. Their other Lubbock IHOP is located on University Avenue.

Covenant Park is a 72-acre mixed-use development anchored by Covenant Health Grace Surgical Hospital at 82nd and Marsha Sharp Freeway. The innovative new concept for Lubbock is brought to life by the joint venture between Hodges Development and Covenant Health.
