Long-time Lubbock favorite Pedro's Tamales will be expanding in Lubbock and opening a new location in Southwest Lubbock. But one new location isn't the only thing planned for Pedro's Tamales. The owners have massive plans for the Lubbock staple.

Though the current owner Bryan Radney and the Pedro's Tamales management team are looking ahead, they aren't losing sight of the history and tradition of Pete Hale, the founder of Pedro's Tamales.

Hale, along with his wife Sally, started making tamales in 1977 and began selling them out of an auto parts store. Then in 1981, Pedro's Tamales officially opened for business. In 1993, Pedro's Tamales was named the Official Tamale of Texas.

Don't worry, the location of Pedro's Tamales at 8207 Highway 87 isn't going anywhere. If it's been a while since you've been there, the building has gone through some changes over the past couple of years, including expanding dine-in service, serving alcohol and adding more items to the menu.

The new Pedro's Tamales will be located at 6620 Milwaukee Ave., Suite 950. The location may be familiar to Lubbock foodies, as it was previously home to The Pie Bar. The owners are targeting a mid-September to mid-October opening date. The new location is scheduled as of now to be open Monday through Saturday, 7 a.m. to 7 p.m.

They will of course have all their great tamales on the menu. I also learned today that they will be adding new tamales to the menu, in addition to the vegan and vegetarian options they currently serve. Pedro's will also serve, as they do now at their first location, breakfast, lunch and dinner burritos, nachos, and more. When the second location opens, they will also be rolling out a new kids menu.

While a new location is great news for this historic business, it's not the only thing we learned about the big plans for Pedro's Tamales. The Official Tamale is about to expand beyond Lubbock -- and even beyond Texas. The plan that's currently in the works has Pedro's Tamales opening five locations in Lubbock and 200 locations in 15 years across Texas and other states. All of this while keeping to its original recipes, history and tradition.

The future is bright for Pedro's Tamales, and we can't wait to see it roll out.
