Fall is on the horizon, and with it comes back to school, football and Hatch green chiles. But how do you best prepare and store them?

One of the signature smells of fall on the South Plains is roasting chiles, and United Supermarket, Amigos, Market Street and Alberston's are roasting them each weekend through the end of August.

But did you know that if you take them home and just leave them in the fridge that they will spoil within four days? Yikes.

Here are steps to ensure that you properly store your chiles and enjoy them well into winter.

  1. The most important thing to remember is to wear rubber gloves. Otherwise, the chiles will burn your skin and any part of you that you touch. Think about that for a moment.
  2. Peel off the skin, which will be easy since they have already been roasted.
  3. Take the seeds out and slice or chop, according to your preference.
  4. Put them in freezer bags.
  5. Date the bags with a marker and freeze. But the chiles only stay good in the freezer for a few months.
