There's many ways to stay in shape, running, aerobics, lifting weights, my wife and I do a combination but our favorite is "trekking" with our Nordic walking sticks.

It was great to find that Lubbock has a strong community of walkers as we found on the Healthy Lubbock website.  There are many paths laid out for you on this page.  Lubbock has some challenges of course with the wind and flat terrain, but there's also many parks and safe open areas to get around.

My wife and I prefer "nordic walking" with sticks over jogging because it's easier on the joints. However, you might need to do some short sprints with the sticks to get the heart racing to optimize the workout.  Using the sticks to walk also helps you keep better posture and burn more calories by using the arms as well.

We found "trecking" or "hiking" sticks in town at Cabela's, Gander Mountain and Academy if you want to try using them. They are very useful if you are headed to the canyons in a heavier terrain, but we use them for just walking down the flat street as well.

I recommend using carbon sticks, Leki is one of the better brands. My wife is from Germany, they use them all the time over in Europe.  Carbon absorbs the impact better than other types like aluminum or even wood and it will be easier on your shoulder, elbow and wrists.
